Greek fir tree honey is harvested mostly on the mainland and the Peloponnese.  This fir honey is distinguished by its cream highlights, thick texture and a pleasant discrete resinous smell. Because of its low glucose levels (under 30%) it rarely crystalizes even after years. Its extraction is extremely difficult and expensive.
